I make this often. It’s an instant side! I get my greens on the table and it’s just about the BEST asparagus you’ll ever have. Actually, in all seriousness, I think this is my all time favourite asparagus side. ???? . BUT TELL ME!! What’s your favourite way with asparagus?? . Parmesan Roasted Asparagus | Serves 4 as side . INGREDIENTS 2 large bunches asparagus 1 ½ tsp olive oil Salt and pepper 2 tbsp panko breadcrumbs (or sub with ordinary) 2 tbsp grated parmesan . DIRECTIONS 1. Preheat oven to 220C/430F. Snap ends off asparagus. Scatter on baking tray. 2. Drizzle with ½ tsp oil, sprinkle with salt and pepper. Use tongs to toss, then line them up on the tray so they are touching each other. 3. Sprinkle with breadcrumbs, then parmesan. Bake 10 minutes or until asparagus is cooked to your liking (10 min = tender crisp). Serve immediately! . Enjoy!
